Gastroesophageal reflux disease (GERD) is a condition where the contents of the stomach move back up the food pipe regularly. People can improve symptoms by including certain foods in their diet and avoiding others. This regurgitation is usually long term and can result in uncomfortable symptoms, including heartburn and pain in the upper abdomen. The severity of the condition often relates to a person's diet and lifestyle. It affects about 20% of adults in western culture. 2 tablespoons butter1 medium onion, chopped2 tablespoons all-purpose flour11/2 cups chicken broth, I used homemade1 cup chopped green chile peppers, I used mild fire roasted green chile peppers in the jar from Fred Meyer3 clove garlic, finely chopped, more if desired1 teaspoon Kosher salt, or season to taste1/2 teaspoon ground cumin, more if desired6 flour tortillas1 cup shredded Monterey Jack cheese1 cup shredded mild Cheddar cheese2 cups shredded, cooked chicken breast meat1 cup heavy cream1/2 - 1 cup any cheese to sprinkle over the topgreen onion & cilantro, chopped for garnish
