Informal food activities constitute enormous economic potential for the city of Bouaké. They provide a convincing response to food needs and youth unemployment. However, the lack of supervision of this sector can lead to all sorts of environmental and health problems. Thus, the subject raises the problem of environmental and health risks induced by the emergence of informal food activities in the city of Bouaké. Consequently, the objective of this book is to contribute to a better knowledge of the environmental and sanitary problems related to the dynamism of these informal food activities. The methodological approach adopted for this study is based on documentary research and a field survey. The results obtained indicate that the actors of the informal food sector manage the waste produced by their activities in an inadequate manner. Indeed, 77.9% of these actors evacuate the waste in open spaces and gutters. In addition, this sector of activity contributes to the degradation of air quality through the fumes produced and the suffocating odors.
