The history of Northern New Mexican cuisine is long and illustrious. The indigenous cuisine of Mesoamerica was combined with European cuisine, particularly Spanish cuisine, that was brought to the Americas during the Spanish colonization of the region. As these settlers made their way to what is now known as North New Mexico they established a unique take on the foods of Central America. The Northern New Mexican cuisine that resulted from the fusion of these two cultures was entirely original.
