The title of this work is inspired from a United States Food Administration poster that used "In her wheatless kitchen" as the caption. The recipes here have been reproduced exactly as they appeared in the 1918 book. Illustrations from cookbooks and advertisements from the early years of the twentieth century have been added for visual appeal. The original book featured artwork only on the front and back covers. In order to maintain their historical integrity, no attempt has been made to update the instructions or ingredients for the modern cook. As noted in the book itself, the recipes were drawn from Farmers' Bulletin 565, U. S. Department of Agriculture, and from leaflets issues by the National Civic Federation. Whether you are looking for new recipes or simply enjoy thumbing through old cookbooks, In Her Meatless Kitchen, War Recipes from World War I is an interesting and enlightening read.
