Dairy and Food industry did contribute towards the tremendous progress recorded by the agricultural sector in our country. The need of practical book consisting of all relevant and useful approaches dealt within the subject for proper conduct of experiments was greatly felt. Therefore, preparation of practical book for different courses was taken up. The practical book on 'Dairy Engineering' has been prepared in a consolidated comprehensive form to provide all needed information on the practical aspects of dairy industry equipment. Corollary experiments are also suggested, so that students get enough opportunity of homework also. The information on theoretical consideration upon which the practical experiment methods are based, have also been incorporated to make the different exercises more meaningful. It isfelt that this practical book will serve the need of the students offering courses 'Dairy Engineering' in B. Tech. (Dairy Technology) syllabus as per V dean committee.
