Curry & Rice is a collection of Sri Lankan recipes that have been time tested and passed down for three generations in the author's family. Sri Lankan recipes are simple to make with organic ingredients, spices, coconut milk, with no elaborate equipment required. Therefore exact measurements of condiments are deemed unnecessary for the Sri Lankan cook. The general rule of thumb is one pinch of spice is for one pound of vegetables or meat. But in many instances, there are exceptions to this rule. Hence the Sri Lankan cook puts in a pinch of this and a pinch of that and wham, bam...... the outcome is mouth-watering food layered with a multitude of flavors. The famous Sri Lankan curry refers to a variety of flavorful dishes cooked mostly with coconut milk and eaten usually with rice. The recipes in this book, written with an international audience in mind, can be altered to suit one's palate.
