I am a semiprofessional cook with professional skills acquired over the course of something like a quarter-century. After the COVID lockdown put everyone out of work I began to really pay attention to how I cook at home. This book is an attempt to describe my method and to give you the tools to cook fluidly without getting bogged down in the quest for perfect food.
I don't make perfect food, I make delicious, sometimes surprising food, and I truly enjoy doing it. My goal here is to give you the ability to get beyond all the hang-ups that may be keeping you out of the kitchen. We're not master chefs, but we can make people smile with our cooking, we can eat better, and we can eat what we want when we have the basics down.
