Aging refers to a multidimensional process of physical, psychological, and social change. Fructose is widely used in foods and beverages because its high relative sweetness. Soybean oil is one of the most widely consumed cooking oils, also, coconut is a part of the daily diets of many people. The aim of the present work is to assess the correlation of aging and dietary habits on some organs of albino rat.Pancreas, kidney and hippo-campus were collected from each rat. Organs were examined by light microscopy (Hx.&E. and immunohistochemistry) and electron microscopy. The result of this work showed degenerative changes of high fat diet and high fructose diet on the studied which increased progressively with age. So high fructose and fat diets should be avoided.
