Welcome to my first book "101 Salad Days"
Get ready for an adventure which will change your life as it did mine.
I was struggling with my weight, had bad eating habits and my health problems were escalating. I also never considered myself a cook or any type of "foodie" but needed to find a way to end my unhealthy lifestyle.
I started looking for ways to incorporate more fresh fruit, vegetables and fiber in my diet while cutting flours and sugars. An easy way to do that was to eat salad every day as a main meal. I was looking for salads that were not too boring, were interesting, colorful, wholesome with a variety of ingredients. The recipes I found (and tweaked) were just amazing so I started to share them with friends and that's how the book came to light.
The recipes are easy to read and the salads are quick to assemble because I don't like complicated recipes. There are no long, drawn out methods, you simply cut and combine. The portions are enough for two as a main meal or for the family as a side dish.
